Stone Eagle Winery: A Bold New Vision

Inside Niagara’s Most Anticipated Winery Opening

Niagara-on-the-Lake has a new estate winery, one with an unusually clear sense of purpose. Stone Eagle Winery, which opened in November 2025, is the second venture from sisters Angela Marotta and Melissa Marotta-Paolicelli, the founders of Two Sisters Vineyards, who have spent two decades proving that Canadian wine deserves serious global attention. This time, they’ve built something certified to be sustainable, led by a management team that is 90 per cent female and designed from the ground up to be as much a cultural destination as a place to taste wine.

That ambition is expressed across a 36-acre estate that includes intimate private tasting rooms, The Nest at Stone Eagle — a Mediterranean-inspired restaurant guided by Estate Sommelier Magister & Wine Director Dieter Unruh — and a series of event spaces ranging from a grand ballroom to a private dining room ideal for 12 guests.

The interior architecture, designed by Toronto-based Dochia Interior Design and recipient of the 2025 LIV Hospitality Design Award, draws from Italian winemaking traditions while remaining rooted in the Canadian landscape. Softly pigmented Venetian plaster, vineyard- inspired tones and custom millwork present themselves gradually across the building’s tasting rooms and gathering spaces. Lead designer Adriana Mot captures the effect precisely: “The interior rooms unfold like wine, revealing their details gradually.”

The winemaking philosophy is equally unhurried. Head Winemaker Adam Pearce oversees a small, blend-focused portfolio built on a non- interventionist approach — extended barrel aging, careful fruit selection — minimal intervention at every stage. The wines are already drawing international attention, with medals from Decanter and the National Wine Awards of Canada across multiple vintages.

With a certified sustainable designation, a predominantly female leadership team and an estate built to be experienced as much as visited, Stone Eagle arrives as one of the most considered hospitality openings Niagara has seen in years.
