As summer approaches, Italy remains one of the world’s most sought-after destinations. Among its rising stars is Puglia, a region gaining international acclaim for its cuisine, culture and way of life. Like much of Italy, Puglia is defined by passion embedded in the DNA of its people, who embrace, nurture and refine it.
This is the case for Vincenzo Vigilante, owner of Osteria Le Arpie — a multi-award-winning and critically acclaimed restaurant tavern nestled in Bari — and if you were to walk by it, you would slip right by, it is so blended into the natural architecture of the paese (country).

But it’s Vigilante’s charisma and Le Arpie’s service and menu that have guests coming from afar to experience the signature Puglian Mediterranean cuisine.
Vigilante’s story began at just 11 years old, when he washed dishes after school to help support his family. That early experience sparked a career that would take him from Bari to London, where he refined his language skills and hospitality expertise, and later to Sardinia, at the time Italy’s premier tourism destination, where he launched and managed some of the region’s most respected restaurants.
When Vigilante returned to Bari in the early 2000s, he brought with him decades of experience and a clear vision. Joining Le Arpie in 2006, he eventually acquired the restaurant and transformed it into one of the city’s most celebrated dining destinations.

“Our cuisine is exclusively territorial — and I want to stress that,” says Vigilante. “Everything that enters this restaurant comes only from Puglia: the olive oils, the wines, the cheeses spanning from northern to southern Puglia, the cured meats and salumi from Martina Franca — everything is regional and fresh.”
Signature dishes include orecchiette with turnip greens and anchovies, fresh seafood pasta and tender grilled octopus. Complemented by attentive service and local wines, the experience is truly one-of-a-kind.
